- Garlic Aioli
This aioli recipe is creates a perfect combo for your sandwiches! Ingredients: 2 medium sized potatoes boiled 1/2 tsp white vinegar 1/2 cup plain yogurt 1/2 tsp salt 3 minced garlic cloves 1 tbsp vegetable oil Directions: Place the boiled potatoes ,vinegar, yogurt , salt, and garlic in a bowl and blend until combined.(you can use a blender or an immersion blender) After they are combined add the oil gradually while mixing .(if you put the oil all at once it will separate ). Bon Appétit! Note: Store in the refrigerator .
- Homemade Healthy Yogurt Cups
These yogurt cups are such delicious treats yet have an astounding nutritional value. Ingredients: 350g plain low fat yogurt sugar free/fat free jello 2 tsp low fat condensed milk Toppings of choice( granola ,chia seeds ,dried currants ,honey, etc.) Directions: Follow the instructions on the jello sachet and place the mixture aside to cool(let the mixture cool until it reaches room temperature don’t allow it to set firmly) In a separate bowl ,whisk the yogurt and condensed milk together. Then add the jello mixture and keep 1/4 of the mixture to top your yogurt. Pour your mixture into containers of choice and pour extra jello on top. Allow to cool for 2 hours before serving. Top it off with any toppings of choice ex: granola,chia seeds,dried currants,honey,etc. Bon Appétit!
- Crispy Chicken Burgers
This burger is the perfect combo of both flavours and textures ! The crispiness of the bun and the chicken perfectly pairs with the tanginess of the coleslaw and the garlic aioli! Ingredients: 1 kg of chicken breasts 2 cups of Panko bread crumbs 2 1/2 cups of Vegetable oil (for frying) Flour mix: 4 tbsp sweet paprika 2 tbsp oregano 1/2 tsp salt 1 tsp black pepper 1/2 tsp dried mustard powder(optional) 1 1/2 cup flour Egg mix: 3 eggs 1/2 tsp of powdered cardamom 1 tsp salt 1 tsp grated ginger Directions: Using a food-safe plastic bag cover the chicken breast and pound the chicken using any heavy object (like a rolling pin) until its an even thickness. Mix the flour and the spices together in a separate bowl. Whisk the eggs ,cardamom,salt,and grated ginger. Then coat the all chicken breasts in the flour mix then dip them into the eggs then cover them with the panko . In a large pot heat the vegetable oil so it can reach a temperature of 375°C .(another way of making sure the oil is hot enough is by carefully placing a piece of bread in the oil and if the oil bubbles you can begin frying if not just heat the oil for a couple more minutes and try again). Fry the chicken for 4 minutes per side until golden brown. Once the chicken is cooked place them on a plate lined with paper towels to drain the oil. - The Best Pancakes
I can't think of any breakfast that's better than a huge stack of fluffy pancakes showered with syrup :) Makes about 12 pancakes Ingredients: 1 egg 1 cup milk 2 tbsp oil or melted butter 1 cup flour 1 tbsp sugar 1/4 tsp salt 1 tsp vanilla 3 tsp baking powder Toppings (butter, maple syrup, nuts , etc.) Directions: In a large bowl, mix the flour, sugar, baking powder, and salt. Add the eggs and vanilla into the flour and mix until combined. Gradually add the milk as you mix to prevent any lumps from forming. Place a non stick pan onto medium high heat. Once the pan is hot, pour in 1/4 cup of pancake batter onto the pan. Flip the pancake when bubbles start to appear on the surface of the batter. Repeat with all the batter. - Béchamel Sauce
Béchamel sauce is considered to be one of the Mother sauces in the French cuisine. Yet surprisingly it's one of the easiest and fastest sauces to make. Ingredients: 5 tbsp of butter 5 tbsp flour 3 1/2 cups milk 1/2 tsp nutmeg 1/2 tsp salt 1/2 tsp black pepper 1/3 cup grated Parmesan cheese Directions: Start by placing the butter and flour in a small pot over high heat to create a roux(A roux is is basically equal parts of butter and flour cooked together and used to thicken sauces) Cook the roux for 2 minutes just to cook off the taste of flour. Stir milk into the roux and whisk until the sauce starts to thicken. Lower the temperature and add the nutmeg, salt, and black pepper. Finally , Mix in the Parmesan cheese and you will have an absolutely delicious sauce. Bon Appétit!
- Middle Eastern Chicken Skewers (Tawouk)
This dish is a must have in any Lebanese household BBQ since its always the dish that finishes first so Grab Em While You Still Can! Ingredients: 1 kg chicken breasts (cut into about 1.5 inch cubes) 1 green bell pepper (cut into squares) 1 cup of whole mushrooms Chicken marinade : 1/4 cup yogurt 1/4 cup olive oil 2 medium lemons (juiced) 1 tsp of grated ginger 1/2 tsp of powdered cardamom 1/2 tsp white pepper 1/2 tsp salt 3 garlic(crushed) 1/2 tsp oregano 1 tsp paprika 2 tbsp ketchup Directions: Mix all the ingredients of the chicken marinade together in a large bowl. Then put the chicken, bell pepper ,and mushrooms into the marinade and mix the chicken until its fully coated Allow the chicken to sit in the mix for 4 hours before cooking. Place the chicken on skewers or just on a baking pan. (check cooking methods below) Cooking Methods: BBQ on charcoal ( 5 min per side or until fully cooked) Electric grill(5 min per side or until fully cooked) In the oven (25-30 min at 180°)
- Golden Crescents
This recipe makes the fluffiest pastries that look phenomenal ! Ingredients: 3 cups flour ( and extra for rolling the dough) 2 eggs 2 tbsp powdered sugar 1/2 tsp salt 1 tbsp yeast 1 cup milk 1/2 cup of softened butter Fillings: 1/3 cup zaatár +6 tbsp of olive oil Shredded cheese (I used a mix of mozzarella and Akawi cheese) one egg yolk and a tbsp of milk black sesame seeds (or any seed of choice) Directions: Place the flour, 2 eggs, powdered sugar, salt, and yeast in a large bowl or a stand mixer and mix. While mixing gradually add the milk until the dough forms. Once the dough forms add the butter 2 tbsp at a time until its fully incorporated. Knead the dough for 2-5 minutes . Cover and allow to rest for 1 hour. Prepare the fillings accordingly : (mix the zaatár with the oil-Shred your cheeses) Whisk the one egg yolk with a tbsp of milk to create an "egg wash" . After the dough rested , cut it in half (covering one of the pieces for it not to dry) Using the rolling pin , roll out the dough into a circle about 1.5 cm thick. Cut the dough into 8 equal triangles. Place the filling on the top of each triangle and roll going toward the tip. After rolling, take both edges and bind them together creating a crescent. After repeating with the remaining dough , place the crescents onto a baking sheet either greased with some oil or lined with some parchment paper. Brush the crescents with the egg wash and sprinkle some black sesame seeds or any seed of choice to create a difference between each crescent filling. Then bake the crescents for 20 minutes at 180 degrees celsius . Bon Appétit!
- Petit Four Cookies
These buttery cookies are little bites of Heaven! Ingredients: 200g unsalted butter(at room temperature) 1 cup sugar 2 eggs 1/2 tsp salt 1 tsp vanilla 2 1/3 cup flour(and more for rolling) 2 tsp dutch cocoa powder(if your making a chocolate base) toppings for decorating(i used jam, chocolate, powdered sugar and sprinkles) Directions: In a large bowl , cream the butter and sugar together using a hand or stand mixer. Add the vanilla and eggs and combine. Then add in the salt and flour and stir to combine. Cover the dough with some food wrap and refrigerate for 20 minutes. Cut the dough in half and place the other piece in the fridge whilst working with this one. Roll the dough and cut into desired shapes using a stencil or a cookie cutter.(for filling the cookies with jam just create 2 identical cookies and cut out a circle in the center from one of them) (If you want to make a chocolate based dough just add some cocoa powder with the flour and decrease the mount of flour by 2 tbsps) Place the cut out shapes in the fridge for 10 minutes before baking(this will prevent the cookies from loosing there shape) Once cooled , bake for 12 minutes at 170. degrees celsius. When they are out of the oven allow them to cool fully before dipping in melted chocolate, filling with jam, or dusting with powdered sugar. Bon Appétit!
- No Bake Oreo Pops
These are probably the easiest pops you will ever make ! Ingredients: 24 crushed oreos 1/3 cup cream cheese 1/2 cup of melted chocolate of choice(optional) mini popsicle sticks or cake pop sticks( you can avoid using a stick and make these treats into truffles) Directions: Start by crushing the Oreos into a fine powder consistency. Then mix in the cream cheese until a dough forms. Start creating little truffles by rolling spoonfuls of the dough between your palms. Then refrigerate the truffles for 20 minutes (if you want to create pops , dip the tip of your stick with some melted chocolate then place them into your truffles and refrigerate) . Melt the chocolates (microwaving the chocolate for 1 minute whilst mixing every 20 seconds) Finally dip your truffles/pops into the melted chocolate and let them cool until the chocolate firms up. You can decorate your truffles/pops with some sprinkles ,chocolate ,more crushed Oreos, etc. Bon Appétit!
- Homemade Granola
Home made granola will be the next big hit at your breakfast table ! Its nutritious yet delicious which makes it the ultimate snack or breakfast any day of the week! Ingredients: 2 1/2 cups of old fashioned oats or quick-cooking oats 1/2 cup peanut butter(or any type of nut butter ) 3 tbsp coconut oil 1/2 cup of honey 2 tsp vanilla 2 tsp cinnamon - 1/2 tsp salt 1/2 cup of mix-ins (almonds,raisins,hazelnuts,etc.) 1 tbsp of Flax seed/chia seeds(optional) Directions: Mix the oats,cinnamon,salt,mix-ins in one bowl. In a pan over medium heat place the peanut butter,coconut oil ,honey,vanilla and heat them until the coconut oil melts and the mixture is combined well OR just place the ingredients in a microwave safe bowl and microwave it for 2 minutes whilst mixing until its fully combined. Pour in your coconut oil mix onto the oats and stir to coat all the oats with the mixture. Place your mix on a baking sheet (lined with parchment paper or greased with some coconut oil) And bake it for 15 min at 180° if you want larger bits of granola don’t mix it too often in the oven while if you want smaller bits stir the mix (using a wooden spoon)in the oven every 5 min to break up the pieces . - Meaty Bolognese Sauce
This sauce is perfect for making a classic lasagna or just serving with some pasta . Any way its served its just absolutely delish ! Ingredients : 1/2 kg ground beef 1 small onion (finely chopped) 2 tsp tomato paste 1 8oz can of whole tomatoes 4oz of crushed tomatoes 1 cup water 2 tbsp dried oregano 2 tbsp dried basil 1 tsp salt 1/8 tsp pepper 3 garlic cloves 2 bayleaves(remove before serving) 2 tbsp olive oil fresh basil Directions: Start off by placing 2 tbsp of olive oil into a pot on medium high heat and cooking the ground beef . Once the ground beef is cooked , add the onion and cook until translucent . Add the tomato paste and all the spices onto the ground beef and mix. Then proceed to adding both the whole and crushed tomatoes and mixing the sauce until it bubbles. Finally add one cup of water and some fresh basil into the sauce and mix until incorporated . Then cover the pot with a lid and allow the sauce to simmer at least 1hr before serving. Bon Appétit ! NOTE: remove the fresh basil and bayleaves before serving .
