These noodles are made under 15 min yet taste sooo good!Also this recipe is vegetarian and vegan friendly!
Ingredients:
2 cups vegetable broth
200 g of noodles of choice(I used pancit canton)
1 tsp of pepper
1/2 tsp salt
6 tbsp soy sauce
2 tbsp chopped ginger
3 cloves sliced garlic
sliced green onion
1 small white onion diced
2 tbsp olive oil
1 thinly sliced carrot
1 cup of sliced cabbage (you can use any veggies of choice ex:bell peppers , broccoli,etc.)
Directions:
In a large pan on high heat , place the olive oil,garlic,white onion,green onion,and ginger and stir fry for 2 min until aromatic.
Add in the vegetables and stir fry for 7 min until cooked.
In a pot boil 2 cups of vegetable broth and cook the noodles for 4 min until semi-cooked.
Strain the noodles and save the vegetable stock for later.
Place the noodles back into the pan and stir in the salt pepper and soy sauce.
Add 1/2 cup of remaining vegetable broth to the pan and stir fry for 2 more min.
